Job duties:
• Oversee daily restaurant operations ensuring smooth coordination between kitchen and front of floor staff while monitoring food preparation and presentation to maintain authenticity quality and consistency;
• Collaborate with the sushi chef to maintain and update the menu regularly tasting and evaluating dishes and introducing seasonal or specialty sushi items to attract and retain customers;
• Address customer complaints and special requests promptly to guarantee a high quality and satisfying dining experience;
• Ensure compliance with local health and safety regulations by maintaining cleanliness in kitchen and dining areas scheduling sanitation and pest control procedures and training staff on food safety and allergy awareness especially regarding raw fish and shellfish;
• Manage procurement and inventory of sushi ingredients including high grade seafood rice and nori by maintaining vendor relationships ensuring proper storage minimizing waste and tracking stock levels accurately;
• Hire, train, and supervise staff including sushi chefs kitchen assistants and servers ensuring adherence to food handling and hygiene standards sushi specific service etiquette and traditional Japanese dining customs while motivating the team and managing performance;
• Oversee marketing initiatives such as social media, advertising and local promotions to increase brand visibility and customer engagement;
• Manage restaurant finances by overseeing budgets and payroll, controlling costs, monitoring sales, preparing financial reports, and handling POS systems and daily cashouts.
