Duties and Responsibilities:
• Train staff in preparation, cooking and handling food (Food and safety/ handling skills)
o Enforce sanitary practices for safe food handling (WHMIS and AHS guidelines)
• Recruit and hire staff
• Conduct performance reviews
o Assist the Head Chef with staff development by providing ongoing feedback
o Establish staff performance expectations and conduct performance reviews, as per Employee Handbook Guidelines
• Plan, organize, direct, control and evaluate daily operations of BOH and FOH
o Plan and organize daily opening and closing checklists, daily and weekly cleaning duties and routines and monthly health inspections
o Work closely with management teams to ensure all the needs of the restaurant are being met, including management from Una Pizza + Wine and Una Take Away
o Provide a safe working environment by taking steps to reduce the the risks of injury and accidents.
• Advise managers and employees on staffing policies and procedures
o Provide direction to employees regarding Una Pizza’s policies and operations by conducting orientation meetings regarding our philosophy and by hosting motivational daily pre-shifts
• Resolve problems that arise, such as customer complaints and supply shortages
• Manage kitchen operations
o Supervise general cleanliness and maintenance of kitchen area and equipment
o Ensure all products are stocked and ready to go at opening times
• Plan menus and ensure food meets quality standards
o Lead and oversee the production of prep and menu items
o Maintain food standards at every stage of the cooking process to ensure consistency of all the products being served
• Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility and labor costs
• Collaborate with the Head Chef to come up with new items and recipes that are necessary for product development
• Supervise cooks and other kitchen staff
o Ensure all staff arrive to work 15 minutes before they are scheduled to start work
o Ensure all staff maintain proper uniforms and appearance standards
o Ensure all staff complete the assigned duties before leaving the restaurant
o Educate staff on recycling and composting (environmental program)
• Prepare and cook meals or specialty foods
o Butchery
o Hand-made pasta
